Ingredients (serves 2)

  • 2 salmon fillets (about 150 to 180 g each)

  • 50 g sun dried tomatoes (in oil or rehydrated)

  • 1 clove garlic, finely chopped

  • 150 g broccoli florets

  • 1 medium potato, peeled and cubed

  • 1 egg

  • 1 to 2 tbsp wholemeal or oat flour

  • Olive oil (for cooking)

  • Salt and pepper to taste

  • Lemon wedges (to serve)

  • Fresh herbs such as parsley or basil

Method

Step 1 – Preheat and Prep

Preheat your oven to 200°C (fan 180°C / gas mark 6). Steam or boil the broccoli florets for about five minutes until tender, then drain well.
